Wonderful Lemon Gingerbread Checkerboard Cookies DIY
Unique Christmas cookie recipe #24. This is my last cookie post of 2015. Where has the time gone? Probably making all those Christmas cookies. The lemon and gingerbread flavors in the DIY recipe sound very interesting. The look of the cookie is different which will catch the eye of your guests. Chocolate and vanilla checkerboard cookies are an old-fashioned treat that you occasionally find in the cookie jar, but checkerboard cookies shouldn’t be limited to just those flavors. Make them a holiday treat by using complementary flavors like lemon and gingerbread spice. Though the recipe sounds a bit fussy because of the two doughs that need to be made, the end results are festive cookies that will stand out among all other cookies.
ingredients
LEMON DOUGH:
- 2 sticks (225g or 1 cup) unsalted butter, softened
- 1 cup (120g) confectioners’ sugar
- 1/3 cup (70g) granulated sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon vanilla extract
- 2 teaspoons lemon extract
- 1 large egg
- 2 1/2 cups (315g) all-purpose flour
GINGERBREAD COOKIES:
- 1 1/2 sticks (170g or 3/4 cup) unsalted butter, softened
- 1/2 cup (60g) confectioners’ sugar
- 1/3 cup (75g) packed dark brown sugar
- 1/3 cup dark molasses
- 1 teaspoon kosher salt
- 1/4 teaspoon baking soda
